When deciding what to write as an introduction,Iwas determined not to get tied up with this wine or that and which country does what ….After all, the much respected WORLD ATLAS of WINE dedicates the first 52 pages to the; History & evolution of wine, Geogra phy, Weather& sunlight, Terroir (soil type), Grape varieties, Wine making processes, as well as Storing, serving & tasting notesand that is before it even mentions a growing region or specific vineyard. So what can we hope to achieve here on one page?
Well, our hope is that the descriptions help and that the diverse range of wines we have selected for your enjoyment will not only compliment your meal but will give you the confidence to experiment with differ ent grape varietals and allow you to savour the many distinctly different tastes from around the world.
We don’t believe in getting all fussed up about wheth er a Burgundy is better than a Chiantior whether a Chateau Magnol is really worth $120, that is up to the consumer but we do believe that a well paired wine will definitely add depth and enjoyment to your meal. We also believe that there is good wine and bad wine and unfortunately, much like anything else in life that is worth having,it’s usually defined by price. We have therefore deliberately avoided putting a cheap option on the menu,as cheap invariably disappoints but we do believe that even our entry level wines offer a great balance of quality and affordability. At the other end of the scale our premier wines offer an unrivalled taste experience and will compete with any offering made by the most expensive restaurants in the region.

Typically good red wine matures with age, so the older wines have had a chance to develop in both colour and acquire the full-bodied taste so often men tioned, whereas white wine is fully developed for drinking after a relatively short maturation period of around 2 to 4 years and, with certain exceptions, a definite falling off of quality thereafter.
So, if it’s a fizzy and exuberant aperitif to break the ice, a young, lightweight white to accompany pasta or a full-on robust red to support a succulent steak with a rich sauce, we have the right choice for you.
If you are unsure of which wine to choose, don’t be afraid to experiment we have over 50 to choose from or see our recommendations on the following page.
Whichever choice you make,we hope you have a wonderful meal and enjoy your time with us and please remember that no good story about an evening out ever contained the phrase:
“LAST NIGHT WE HAD A GREAT SODA WITH DINNER”
Our Recommendations
Every wine drinker will have a preference and whilst there are accepted pairings, your actual choice will be based on personal taste, so if you fancy a Merlot with your fish or a Pinot Grigio with your Kudu, you go for it and don’t let tradition dictate your enjoyment of wine. However, for a general rule of thumb certain wines compliment the various food types and add an additional dimension to the dining experience, a well paired wine will further enhance the flavors of your menu choice and help develop the meal into an event.
Red meat, Game and Spicy Indian dishes generally require a robust wine that can compete with the powerful flavors on the plate. Where more delicate wines will struggle to compete, a stronger, full bodied wine will stand its ground and give a good counter point to the meal.
For Game and Steak (particularly if you like your meat served rare or medium/rare) we recommend:

- Chateau Barrail Laussac- Cabernet Merlot, Cabernet Franc (R2)
- Flagstone Dark Horse – Shiraz (R36)
- Neethingshof – Pinotage (R34)
